How to Prepare Neer dosa or Water dosa .

The south Indian neer dosa is a very smooth and very good health recipe special dosa in Dakshina Kannada   Recipe  . Neer in English ward means water Neer dosa is prepared by girding soaked rice in to a thin watery Batter and very easy to prepare to Neer Dosa . Neer Dosa ideally served with Coconut Chutney.

Ingredients required to Prepare the Neer Dosa


  • Raw rice - 2 cup 
  • Water - 5 cup ( to grind )
  • Salt to taste . 
  •  oil to make dosa .

How to Prepare Neer Dosa or Water Dosa

  1.    Wash and soak the rice for 1-2 hours . If you are in a hurry you can soak it in hot water for 1/2 hour . Grind the rice along with the soaked water to a fine batter . Add salt and mix nicely . 
  2. Heat a fry pan . Smear little oil and pour the batter . Rotate the pan to spread the Batter evenly .
  3. Keep Cavers for 1 minutes . Remove from the pan . Delicious Neer Dosa  ready to serve in chutney or samber .

  • Cashews - 3 tsp (ground ) 
  • Coriander - 1 tsp ( Ground ) 
  • Turmeric powder - 2 tsp 
  • Garam  Masala - 1 tsp 
  • Batter - 2 tsp 
  • Curd - 3 tsp 
  • Salt to taste . 
  • Curry Leaves . 

Preparation : 

  1. Melt the Batter in a pan . 
  2. Add the Paneer and fry until golden brown on all sides . 
  3. Let the paneer soak in warm water for 30 minutes . 
  4. Melt the Batter in a pan . 
  5. Add the onion and sauté until brown  
  6. Add garlic and ginger and sauté until fragrant about a minute . 
  7. Add the chilli powder , Cashews , Tomato , Coriander , turmeric powder , gram Masala and simmer for 5 minutes . 
  8. Add the paneer and simmer and 4 minutes . 
  9. Remove from heat and stir in the batter and curd  . 
Batter Paneer Masala is ready to serve in chapatti , Parrota , nan or rice .

  2. Heat a Kadai and add finely grated carrot and milk . Nicely mix both the items in medium flame
  3. When milk is completely absorbed , add sugar and  mix them nicely till the sugar is absorbed
  4. Add ghee to it so that it doesn`t stick to bottom . Switch off flame . Add Cardamom powder for aroma and taste . Garnish with cashew nuts .
  5. Let it cool for a while .

How to prepare a Parrota

The South  Indian parrota  is very smooth and sweet in parrota it is a common layered flat Indian bread usually available in restaurants and Thattukada / Road side shops across Kerala and other states of south India .

Ingredients :

  • Maida
  • Salt to taste 
  • Oil - 1 tsp 
  • Water

Preparation : 

  1. Make a maida in big bowl . 
  2. Add 1 tsp of oil and Salt 
  3. Mix water slowly till you get soft dough 
  4. Pour 50 ml oil in the dough and mix well . 
  5. Make equal lemon sized bell and keep it for 1 hour . 
  6. Place the maida ball on the polythene sheet / Kitchen marble floor and put 1 tsp of oil over the bell . 
  7. Using your two palms spread equally . 
  8. Then make a spiral 
  9. Now press over the spiral  and make parrota .

How to prepare a sweet doodh peda or Milk peda

Doodh Peda is one of the most popular  North Indian desserts . I love all  kind of milk sweets like Rasagolla , Rasamalai , Gulab jamun , Basundhi and doodh peda .
 The main ingredients for doodh peda are khoa , Sugar and traditional flavourers including cardamom seeds , pistachio nuts and saffron .
 I always thought it takes lot of time to make pedas . But I recently learnt this quick microwave cooking peda from my mother . Believe me  this is one of the easiest methods and it takes less then 30 mints . I hope you like this simple peda recipe . Enjoyed making pedas for Dewali  Festival


Ingredients :

  • Milk - 4 cup 
  • Cardamom powder - 1 tsp 
  • Sugar - 3 cups 
  • Cashew nuts - 10 pieces . 
  • Ghee - 1 tsp

Preparation :

  1. Heat the milk on a medium low heat stirring continuously .
  2. When the milk is reused to 1 cup to see if it is 1 cup . Then add sugar . 
  3. Keep mixing when it starts leaving edges and looks quite dry , add the cardamom powder . 
  4. Take it out  on a  plate greased with ghee . Let it cool to room temperature . Makes the peda .

  3. Coconut milk - 1 cup

Preparation :

  • Soak Ragi in water for  2-3 hours 
  • Take above all ingredients in a mixer grinder with little water . 
  • Grind it  till smooth paste . 
  •  Strain through of a fine sieve ans squeeze out to exert milk from that . 
  • Cook in a heavy bottom  pan , tarring constantly till it becomes thick and transparent . 
  • Add ghee , cardamom powder  and  mix well   
  • When Halwa consistency is reached remove from fire and pour on a greased plate . Cut it to Required shape . 
Ragi Mani/ Ragi Halwa is ready to serve to ghee .

  • Raisins - 10

Preparation :

  1. Remove the skin and powder the cardamom , fry cashew nuts and raisins in ghee till light brown and keep a side . 
  2. In the same pan , add little more ghee and fry rave until there is a slight change in the colour .
  3. Boil 2 cups of water in a vessel . When it begins to boil  , add kesar, yellow colour  and sugar . 
  4. Add the rave little by little to avoid lumps . 
  5. sprinkle cardamom powder simmer and cover with lid so that rave cooks well . 
  6. Top it with the remaining ghee 
  7. Garnish a cashew nut and Raisins .

  2. Add rice , little salt , black jeera and 1 tsp oil in boiling water . 
  3. Cook uncovered on medium heat till rice is tender . 
  4. Take care the rice should not be overcooked and each grin of rice should be separate . 
  5.  When rice is done drain the excess water and spread the cooked rice in a large plate and set a side . 
  6. Heat a oil in a large pan and stir fry all the chopped vegetables ginger , garlic , onion and green chilli for 3-4 minutes . 
  7. Vegetable should not be overcooked , they should be crisp . 
  8. Mix salt and pepper to taste  .
  9. Add the rice and  toss it gently and cook on a medium flame for 2-3 minutes .

  4. Add the roasted wheat flour and ghee and cook for 2 or 3 minutes . Stir continuously and remove from the flame .

South Indian Almond Halwa .
  • Almonds -  125 grams 
  • Sugar - 1 cup 
  • Saffron (Kesar) - 2 tsp 
  • Ghee - 10-12 tsp
  • Cardamom - 1 tsp 
  • Orange food colour - 1 pinch (optional) 
  • Milk - 1 cup  
  • Khoya - 250 gram . 
  • Almond essence . - 2 drops
Preparation:

  • Blanch the almond , cool and remove skin . 
  • Heat 2 tbsp ghee in a frying pan , add the almonds and fry over medium heat until light golden . Drain , cool , transfer to a blander and make a coarse paste . 
  • Soak saffron in 2 tsp of warm milk for 15 Minutes 
  • Heat remaining ghee , add khoya , Bruno on medium heat until light golden . 
  • Add sugar . Stir . 
  • Add milk , stir . 
  • Add almond paste .stir . 
  • Add saffron and Bruno for 5-6 minutes . Add cardamom powder . 
  • remove form flame . Add almond essence  . serve hot .

  • Rice - 2 cup 
  • avalkki  - 1 cup 
  • Jiggery - 3-5 cup 
  • curd - 2 cup
  • Ghee - 1 tsp
  • Salt to taste . 



Preparation  :

  1. Soak  a rice  6-7  hours 
  2. Grind a rice , avalkki , jiggery, salt  And curd  is mix a mixer  grinder .
  3. Add to a dosa  batter in  bowl  . And 10 hours or overnight  in warm place .
  4. Heat a ghee  in pan to add dosa batter and round shape of dosa in pan . Gold colour in fry to a  curd dosa in 2 side .  
curd dosa is ready to serve of  sweet dosa and smooth curd dosa in serve to coconut chutney and samber .  

How to prepare a puliogare

Traditional Iyengar `s   fast is always  accompanied with puliogare it is not only taste but very easy to prepare once is basic paste pulikaichal is ready in hand pulikaichal is a preserved of spicy tamarind paste , which stays  for a few months in the fridge . This when mixed with rice is called puliyodarai or  puliogare . 


The ingredients of prepare in puliogare :
  • oil - 1 tsp
  • Urad dal -1/2 tsp 
  • Chana dal  - 1/2 tsp 
  • Ground nuts - 1/2 tsp
  • Curry leaves - 2 springs 
  • MTR  Puliogare powder  - 2 tsp 


Preparation :

  1. Cook for a rice in a presser cooker 
  2. Heat oil in pan add urad dal , red chilli , chana dal , grounds nuts ,  mustered and curry leaves .
  3. Then add MTR Puliogare powder mix all .
  4. Add rice . 
Ready to serve in puliogare is very sweet and very spicy .

How to prepare a kadale bele payasam

Kadale bele payasam is quite regular pujas  festivals like janmashtami  and Shiva rather and other special occasions including family functions also quit common for launch served in temples . 
 There are two version  - one with rice added to this payasam ( called akki  , kadale bele payasam which many think taste better )  
  Kadale bele  is high protein and deity giber  content and it can act as a good source of carbohydrates for people .
Suffering form diabetes    kadale bele is low on fat and most of it is polyunsaturated  fat which is known to reduces the risk of hart disease
.
Preparation time : 1 hours
Cooking time : 30 minutes .
Serving members : 4 members .  

The ingredients of preparing kadale bele payasam :
  •      Kadale bele - 1 cup 
  •  Jiggery - 3/4 to 1 cup
  • Grated coconut - 1/2 cup 
  • Poppy Seeds ( khus khus )  - 3 tsp
  • Ghee 1 tsp
  • Chew nuts - 8-10 
  • Cardamom - 2 
  • Raisins - 8 to 10 

South Indian Kdale bele payasam .

Preparation :  

  1. wash the kadale bele . Soak the dal/bele in 2 cups of  water for 15 minutes then pressure cook chana dal in the same water used for soaking , until you hear about 2 whistles .
  2. Grind the poppy seeds coconut and cardamom  with little water in a mixer grinder to a smooth  paste . 
  3. In a visual , add jiggery and 1 cup of water (you may use the same water used for cooking the dal/bele if you like )  and heat until the jiggery melts . once a jiggery melts , add coconut paste from stop 2 cooked chana dal for stop 1 and again cook all these ingredients for 5-6 minutes . Remove form the flame .
  4. heat the ghee in anther frying pan ,  add cashew nuts , raisins and fry them until the cashew nuts turns golden brown  in colour . 
  5. Now add fired cashew nuts and raisins to the above  payasam mixers . 
Now the kadale bele payasa or chana dal payasam is ready to serve . 

How to prepare a hesaru bele dosa

The south Indian hesaru bele dosa is very sweet and smooth in dosa . The verity of dosas , and several recipes for each one of them . I wanted to make a healthier version of Adai Dosa.   the moongdal  dosa is a kind of quick fix breakfast menu though loaded with vitamins and other power packed nutrients with body cooling properties . Hence it makes to my weekly list of breakfast do also it can be so easily done without compromising on the taste .

The ingredients of preparing hesaru bele dosa :
  •  Moongdal (hesaru bele ) - 3 cups soaked in hot water .
  • Jeera - 3 tsp
  •  Ginger - 2 
  • Green chilli - 3
  • Ghee - 2 tsp 
  • Salt to taste

Preparation : 

  1. Add a hesaru bele , jeera , 2 green chilli  and salt in mix all ingredients and grinding to a batter .  Serve to bowl .
  2. Heat a griddle , once hot our in a ladle full the dosa batter .
  3. Spired the  batter into a circle . Smear ghee on top and side of the dosas to get a good roasted / crisp dosa . 
  4. After you see the bottom getting light brownish colour , flip the dosa 
  5.  The other side of the dosa should be done 2-3 second .
  6. You can relish this crisp bites of nutritions dosa with coconut chutney and samber .    

How to prepare a lemon rice

The most popular of  south Indian  lemon rice . a  dish I have  had few south Indian temples and also in restaurants . Basically this rice is very easiest to make already cooked for steamed rice . 
 You can make lemon rice with freshly cooked rice or even with left over rice  . 
    Bast is to serve lemon rice with vegetable salad  or your coconut chutney . 
This lemon rice  can also  be made as  a tiff in box or as picnic lunch . its a light dish and you can have it as a light breakfast also . If you are  looking for more easy  rice recipes then do check . tomato rice , masala rice and jeera rice .

The gradients of preparing  lemon rice is are : 

  •  Basmati rice   - 1 Cup
  • Lemon juice - 2 lemon 
  • Turmeric powder - 1/4 tsp
  • Sugar  - 1 tsp
  • Salt to taste 
  • Oil - 2 tsp 
  • Mustard - 1 tsp
  • Urad dal - 1 tsp 
  • Red chilli - 3 
  • chance ki dal -1 tsp
  • Few curry leaves . 


Preparation :

  1. Wash rice . Boil 5-6 cups water in a large pan .Add rice . Cook till done . Strain the rice in a big metal strainer . Spread on a tray . Run a fork to separate grains . 
  2. mix lemon juice , haldi , salt and sugar together . 
  3. heat oil in a kadhai . Reduce flame . Add sarson , dal  and red chillies . Cook on very low flame till dal just starts changing colour . Do not let the dal turn brown .
  4. Add curry leaves . Add the lemon juice mixture. Add 1/4 cup water . Cover and simmer on low flame till dal turns soft and the water dries . Add rice and mix carefully till well mixed . Stir gently for 2-3 minutes . serve hot . 

How to prepare a Vegetable Uttapam

Uttapam is a variety of dosa which is  slightly thicker then dosa , I take the liberty of calling it the Indian pizza . it is usually made with left over dosa batter . Uttapam can be served plain or with    toppings of over choices . There are verity of uttapams  like  Vegetable uttapam, onion uttapam , tomato uttapam , Suji uttapam , Nutty uttapam etc . The ingredients of preparing uttapam is are :

South Indian vegetable uttapam .

  • Rice -2 cup
  • Urad dal  -1/2 cup
  • Salt to taste
  • Onion - 1 Chopped finely 
  • Tomatoes - 2 chopped 
  • Green Capsicum - cut into 1/2 pieces 
  • Boiled peas - 2 tsp
  • Cabbage - 1 finely chopped 
  • Green chilli 2-3 chopped
  •  Ginger - 1/2 piece chopped 
  • Curry leaves - few chopped .


Preparation :    

  1. Soak rice and urad dal 6-7 hours .Grind the rice , urad dal and salt mix in finely to a smooth paste . Keep a side in a warm place for 10-12 hours , to get fermented . 
  2. Mix all vegetable together . 1/2 tsp salt . Keep a side .
  3. Heat a nonstick tawa . Put 1 tsp of oil  on it and then wipe clean with a small piece of cloth . 
  4. Mix the batter well , pour 1 big Karachi of batter on it . Spread the batter a little , making it slightly thick . After 2 minutes , sprinkle some vegetable on them . Pour 2 tsp of oil upon it . Press the topping a little . 
  5. Then turns the side carefully , making sure that the underside is cooked . Remove from tawa after the other side also gets cooked and the onion turns a little brown serve hot with chutney and samber .

How prepare a masala Dahi Vada

The Masala Dahi Vada is a north Indian Recipe  in cook for a perfect vada , and very sweet and  smooth in recipe . Masala  Dahi  vada is a popular snack  in India . The north Indian dahi vada is made slightly differently  then the south  Indian version . In the north Indian  version of dahi vada , we just add the green chutney , saunth or  tamarind chutney and with spice mixed . 
   The south Indian  version , the curd  is lightly sweetens in vada . 

Preparation Time : 30 Min and the soak time 
Cook time : 30 minutes 
Served to 4 members .   

The ingredients of preparing dahi vada is are :

  • Urad dal - 1 cup 
  • Green Chilli - 1 chopped ( hari mirch )
  • Ginger - 1/2 inch chopped ( adrak )
  • Water - 3 tsp for grinding the batter or as required 
  • Salt in taste 
Ingredients of masala dahi :

  • Curd -  2 cups .
  •  1 Red chilli .
  • cumin seeds - 1 tsp .
  • Pepper 1/2 tsp .
  • Salt in taste . 




Preparation of a dahi vada :

  1. Soak the urad dal over night or for at least 4-5 hours . drain them .
  2. Add a  urad dal , water  and salt in grinding  all ingredients  
  3. Take the round batter in a bowl . stir in chopped green chilli ginger  in all mix up a batter . 
  4. Heat oil for deep frying . Either drop the  batter with your hands  or a with spoon in medium hot oil fry the vada in batches till scrip and golden .
  5. Drain the vadas on the paper towels . 
   Preparation of masala Curd : 
  1. Dry roast (Fry with out oil ) pepper , cumin seeds and red chilli . 
  2. Add a salt and all ingredients mix in curd . 
  3. And add the vada in masala curd . 
  4. Masala dahi vada ready is served to masala curd .

The ingredients of preparing vegetable soup is are :
South Indian Vegetable soup

  • Carrot - 1  finely chopped 
  • Beans - 5 to 6 finely chopped 
  • Cauliflower - 4-5 florets finely chopped 
  • Cabbage - 100 grams finely chopped 
  • Spring onion  green -1/4 cup finely chopped 
  • Corn flour - 2 tsp 
  • Onion - 1 finely chopped 
  • Garlic - 3-4 cloves  finely chopped 
  • White or black pepper powder is required  
  • Salt little .  
  • Butter - 1 tsp





Preparation : 


  1. Melt butter  ,add finely chopped onion and garlic , sauté till onion turns pink . 
  2. Then  add all the vegetable sauté till  it is half cooked which takes  only a few minutes as we have chopped all the vegetable finely .
  3. Mix corn flour in a little water and add to the soup . Cook for a few more minutes .
  4. Add salt and pepper powder to taste  . 
Serve hot as a side dish or as an appetizer .

How to Prepare a Masala Dosa

  • Regular Rice   1 cup
  • Boiled Rice     1 cup
  • Urad  dal          1/2 cup
  • Methi               1/4 cup
  • Salt to taste
  • Water               4 gales 


The ingredients of preparing Potato  masala is are :  

  • 4-5 Potato (aloo) 
  • Curry leaves - 4 leaves 
  • Onion- 3
  • Mustered -1 tsp (sarson) 
  •  Cumin seeds (jeera ) - 1 tsp
  • Green chilli  1- 2
  • Turmeric powder -  1 tsp
  • Urad dal -  1 tsp
  • Oil - 1 tsp
  • Salt to taste
  • Red chilli 1 dry red chilli
  • Batter - 1 tsp 

Preparation  : 

  • To prepare the batter , soak both the rice, dal and methi  seeds together in a pan for at least 5 hours . Grind together finely to a paste and add salt . Mix well . Keep a side for overnight  in a warm place, to get fermented . After fermentation , the batter rises a little and smells sour . The batter is ready prepare a masala . 
  • Boil the potato . Peel the mash them roughly. Heat 3 tsp oil in a pan . Reduce flame and add 3/4 tsp sarson , 1 tsp urad dal and 1 dry red chilli .
  • When dal changes colour , add curry leaves , green chilli  fry for 2 minutes on low flame . Add onion . Cook  till transparent . Add salt  . fry for 1 minute .Add 1 cup water . Boil and keep covered on low flame for 3-6 minutes or till dal  turns soft .
  •   Add the mashed  potatoes . Cook for 3 minutes . Mix well . Remove from fire. Keep masala a side .
  • To prepare a dosa , mix the batter nicely with a Karachi
  • Heat  a non stick tawa   on medium flame . Pour a tsp oil . on the tawa and rub the oil with piece of old cloth .
  • Return to fire . Cook till the dosa gets a little cooked
  • Pour 1 tsp of ghee  upon the dosa and on the sides
  • After golden browned of a dosa .
  • Put 2 tsp masala in the centre and a spread a little . Fold over from both sides . Remove from tawa . place a blob of white batter on the dosa and serve hot with coconut chutney and samber .

  • Rave - 2 cup ( Semolina ,  Suji  )
  • Ghee -  11/2 tsp 
  • Oil - 3 tsp
  • Onion - 3 onion 
  • mustard - 1 tsp
  • Urad dal - 1 tsp
  • Curry leaves - 3-4 
  • Green chillies - 1-2
  • Water  - 3 cup
  • Salt to taste .



Preparation of Rava upma is are :

  • Fry rave  with ghee on low flame in a kadhai  till it turns very light brown (changes colour ) and gives out a nice smell . suji from kadhai .
  • Heat oil in a kadhai . Reduce flame .
  • Put sarson and Urad dal . do not let the dal turn brown .
  • When it splutters , add curry leaves , green chilli and onion . fry till onion turn transparent .
  • Then add 2 cups of water ghee and salt needed  . taste the water check for salt .
  • When the water starts boiling , reduce the flame to  low  add rave gradually with one hand and keep stirring  with your other hand .
  • Once the rave absorbed all the water , cover and cook on low flame for 3-4 minutes do not forget to stir in between .
  • Delicious rave upma is ready .
